I hope that everybody had a healthy and happy holiday break and is ready to get back into the swing of things this semester. This Tuesday, the ever popular Valley Café started the semester with an impressive menu as always. The Valley Café is a Marist favorite, offering a variety of dishes usually based on a cultural theme. Last semester we saw cuisine from all over the globe, but this week it was focused on something simple, yet always delicious- The Potato. And better yet, all the potatoes used in this week’s menu were grown locally. Marist Dining is a proud supporter of local Hudson Valley farming, providing the students with seasonal fruits and vegetables that come right from our soil. Savory Potato soup, German potato salad, and Garlic Chicken with potatoes were a few tasty choices. Overall, people seemed to enjoy a hearty meal perfect for the bitter cold day!
